Coconut crab is a delicacy in Kiribati, and this curry is a flavourful way to enjoy it. If you can’t find coconut crab, regular crab works just fine.

1kg crab (typically coconut crab), cleaned and cut into pieces
500ml coconut milk
1 onion, chopped
2 garlic cloves, minced
3cm piece of ginger, grated
1 chilli, sliced (optional)
1 tsp Polynesian curry powder
1 tsp turmeric powder
coconut oil, for frying
Salt to taste
Method:
Place a frying pan over medium heat. Add a little coconut oil and when hot use to fry the onion, garlic and ginger for about 90 seconds or until fragrant.
Scatter over the curry powder, turmeric powder and sliced chilli and stir-fry for 90 seconds.
At this point pour in the coconut milk. Bring to a simmer.
Nestle the crab pieces in the coconut milk, return to a simmer and cook for about 20–25 minutes until everything is heated through.
