Ingredients:
100g crushed carob pods
200g sugar
Method:
Combine the carob pods and sugar in a large pan. Set over medium heat and cook, stirring constantly, until the sugar has melted and has begun to caramelize.
Carefully work in 2l water and bring the mixture to a boil. Take off the heat and set aside to cool. Strain the liquid through a fine-meshed sieve lined with muslin.
Pour into a jug and chill in the refrigerator. Serve well chilled, diluted to taste with chilled water.
