Kenyan Matoke

Matoke is the Swaheli word for 'plantain'. In Uganda it refers to the plantain itself, whilst in Kenya and Tanzania it refers to a dish of plantains cooked with meat.

Ingredients:

10 plantains
500g beef, cubed
500ml beef stock
juice of 1 lemon
oil for frying
1 onion, chopped
3 tomatoes
1 green bell pepper, de-seeded and chopped
1 red bell pepper, de-seeded and chopped
3 garlic cloves, chopped
2 hot chillies, chopped
salt, to taste
1/2 tsp ground coriander seeds
1 tsp cayenne pepper

Method:

Peel the plantains and cut into dice. Sprinkle with the lemon juice to prevent browning and set aside.

Heat the oil in a pan, add the bell peppers, garlic, chillies and onions. Fry for about 5 minutes then add the meat and fry until browned. Scatter over the spices and stir in the stock with 500ml water. Bring the mixture to a boil and add the plantains.

Bring to a boil, reduce to a simmer, cover and cook for 40 minutes.

Serve hot.
