Kebabcheta (Barbecued Sausages) is a traditional Bulgarian recipe for a classic home-made beef sausage flavoured with parsley, garlic and cumin that is barbecued or grilled before serving. Ingredients:
1.4kg minced beef
2 medium onions, finely chopped
2 tsp salt
1 tsp freshly-ground black pepper
3 garlic cloves, finely chopped
1 tbsp ground cumin
140g fresh parsley, finely chopped
180ml water
Method:
Combine all the ingredients in a bowl. Mix thoroughly then cover and refrigerate for 24 hours. When ready light your barbecue or heat your grill (broiler). Take a little of the meat mixture at a time and roll into small sausage shapes either grill or barbecue for about 15 minutes, turning frequently, or until the sausages are cooked through.
