Kadu Ka Halwa

Kadu Ka Halwa is a traditional Indian recipe for a classic dessert or snack of grated bottle gourd or pumpkin flesh cooked in spiced, sweetened milk with almonds, and which are a traditional snack or treat for Diwali. This traditional Diwali snack or dessert is typically made with grated green bottle gourd flesh. However, if you want to prepare it for Halloween you can substitute orange butternut squash flesh (this is actually what canned 'pumpkin' is typically made from). Halloween pumpkin would also work to make Halwa, but you will end up with a smoother more porridge-like final product (you will also have to cook slightly longer to dry it out). For North Americans, you could also add 1/2 tsp of the traditional pumpkin pie spice along with the ground cardamom if making this with pumpkin.

Ingredients:

300g grated bottle gourd (kadu) flesh (or substitute pumpkin)
10 almonds, grated
120ml whole milk
4 tbsp ghee
100g sugar (or more, depending on taste)
1/4 tsp ground cardamom (elachi)

Method:

Heat the ghee in a non-stick wok or pan. Add the grated kadu and stir-fry for about 5 minutes, or until part-cooked.

At this point add the milk, bring to a simmer and cook for about 6 minutes more, or until the kadu is tender. Stir in the sugar, mixing well to combine. Stir until the sugar has dissolved then continue cooking over low heat for about 5 minutes more, stirring frequently, until all the water has evaporated away.

Turn into a warmed bowl, scatter over the grated almonds and serve hot.
