Ingredients:

3 tbsp groundnut oil
1kg of chicken pieces
2 tomatoes, chopped
2 garlic cloves
1/2 tsp ground ginger
1 bay leaf
225g ham, cubed cut
3 hard-boiled eggs, sliced
225g beef, cut into chunks
2 onions, chopped
100g tomato paste
2 hot chillies, chopped
1 tsp salt
750ml stock
280g rice

Method:

Heat the oil in a large pan or heat-proof casserole. Add the chicken and beef and cook until browned then remove the meat and set aside to keep warm. Lower the heat then add the onion and cook until soft (about 5 minutes) before adding the tomatoes, tomato paste, garlic, chillies, ginger, salt, and bay leaf.

Fry for about 10 minutes then add the stock and ham. Bring to a boil, reduce to a simmer and cook for 10 minutes before adding the chicken, beef and rice to the pan. Cover and simmer for 20 minutes, or until the rice is done.

Transfer to a serving plate or tray, garnish with the hard-boiled eggs and serve.
