Peel the plantains then quarter them before slicing lengthways into 2cm strips. Meanwhile, combine the chilli powder, black pepper, paprika, cinnamon, plain flour, nutmeg and all-purpose seasoning in a bowl. Mix thoroughly then add the plantain pieces to the mix, ensuring that all the pieces are thoroughly coated in the spice mix.
Heat the oil in a wok or deep-sided frying pan and heat until a piece of plantain sizzles as soon as it's added to the oil. Add the plantain strips in batches to the hot oil and fry until golden brown. Remove with a slotted spoon, drain on kitchen paper then serve hot.
