Irish Potato Soup

This is a classic Irish soup made from a base of potatoes, onions and bacon cooked in a blend of chicken stock and milk.

Ingredients:

2 rashers of streaky bacon, rinds removed and chopped
30g butter
675g potatoes, peeled and chopped (weigh after preparing)
2 onions, peeled and chopped
900ml chicken stock
300ml milk
6 parsley sprigs, tied together
150ml single cream
1 rasher of streaky bacon, rinds removed, chopped and fried until crisp, to garnish
fresh parsley, chopped, to garnish
salt and ground white pepper, to taste

Method:

Fry the bacon in a saucepan until it renders its fat, then add the butter, potatoes and onions. Continue cooking, stirring, for 10 minutes before adding the stock, milk and parsley sprigs. Season to taste then bring to a boil, reduce to a simmer, cover the pan and cook for about 35 minutes or until the vegetables are tender.

Take off the heat and allow to cool slightly then remove the bundle of parsley sprigs. Turn the soup into a blender and process until smooth (you may need to do this in batches).

Pour the soup into a clean saucepan, stir in the cream and allow to heat through (but do not boil). Serve ladled into warmed soup bowls, garnished with the crisp-fried bacon and chopped parsley. Serve accompanied by soda bread and oatcakes.
