Soda Bread

This is the classic Irish soda bread that really needs to be served warm as soon as it's made. Personally I love it as an accompaniment to soups, but it's also great as a tea-time (or breakfast time!) bread liberally spread with butter and jam.
Ingredients:
250g plain flour
1 tsp salt
1 tsp bicarbonate of soda
2 tsp brown sugar
225ml buttermilk (or natural yoghurt)
Method:
Sift the salt, flour and baking soda into a large bowl then add the brown sugar. Stir to combine then add the buttermilk a little at a time, stirring with a wooden spoon. When the dough begins to come together bring the dough mass together with your hands. You should end-up with a dough that's soft and firm. If it feels sticky to the touch add a little more flour.
Knead the dough in the bowl for a few minutes then shape into a ball and place on a well-greased baking tray. Using a sharp knife slash a deep cross in the top of the bread. Place in an oven pre-heated to 220°C and bake for about 10 minutes then turn the oven down to 200°C (400°F/Gas Mark 6) and continue baking for a further 20 minutes until the bread is well risen and browned and it's base sounds hollow when tapped with your hand.
Take out of the oven, allow the bread to cool for 15 minutes then cut into generous slices and serve with plenty of butter.
