Irish Fisherman's Stew: An Irish recipe for a hearty stew of white fish pieces in a chicken broth base with garden peas and new potatoes.
Ingredients:
225g firm white fish (preferably whole), scaled and gutted
2 tbsp vegetable oil
1 onion, chopped
1 garlic clove, finely chopped
2 tbsp plain flour
1l
chicken broth
500g garden peas or sweetcorn (either frozen or tinned)
225g new potatoes
1 tsp fresh thyme, finely chopped
salt and freshly-ground black pepper, to taste
Method:
Sprinkle the thyme over both sides of the fish and set aside.
Heat 1 tbsp of the oil in a large pan and use to fry the fish lightly on both sides until just cooked through (between 10 and 15 minutes, depending on the size of the fish).
Add the remaining oil to the pan along with the onion and garlic. Fry gently for about 5 minutes, or until the onions are soft.
Scatter over the flour and stir to combine. Cook for 1 minute, stirring frequently to prevent burning.
Now whisk in the chicken broth until smooth then add the potatoes along with the peas or sweetcorn.
Remove the skin and bones from the fish and cut the flesh into bite-sized chunks. Add the fish to the pot and bring the soup back to a simmer.
Cook for 35 minutes, stirring frequently.
Adjust the seasonings, ladle into warmed soup bowls and serve immediately.
