Ila is the Nigerian for okra. However, this okra paste is common to much of West Africa (there is also a Liberian variant of this dish).
Ingredients:
10 to 12 whole okra, finely sliced into rings
Method:
Place the okra in a pot and add just enough water to completely cover it. Bring to a simmer and cook for about 15 minutes. You will end-up with a thick mucilaginous paste.
This can be used as an accompaniment to Ate or Eba or it can be stirred into plain boiled rice.
