Ibihaza (Beans with Pumpkin)

This is considered one of Rwanda's national dishes.

Ingredients:

500g beans
500g pumpkin
Salt, to taste

Method:

Pick over and wash the beans, place in a large bowl, cover with plenty of water and set aside to soak over night. The following day, drain the remaining water from the beans then wash your beans until your water runs clear.

Place the beans in a cooking pot, cover with plenty of water, bring to a simmer and continue cooking until fully tender.

Cut your pumpkin in half (do not peel). Cut the halves longitudinally into wedges then cut the wedges into thirds (scrape and discard any seeds and fibres). Place the pumpkin pieces in a pan, cover with water, bring to a boil and continue cooking for 15–30 over medium heat until just tender. Keep checking after 15 minutes to avoid overcooking them.

Once the beans are tender, drain them and set aside.

When the pumpkin is tender, drain away the water then pour the beans inside. Season to taste with salt, stir together and mash to break up the pieces and attain a more even texture.

Serve hot accompanied by rice.
