Huevos Rancheros is a classic egg and tortilla breakfast dish that is common throughout Central America, though this specific recipe originates in Costa Rica.
Ingredients:
1/2 onion, chopped
fresh chillies, chopped, to taste
440g tinned, chopped, tomatoes
3 garlic cloves, minced
4 tortillas
4 eggs
oil, for frying
pinch of chilli powder (or to taste)
grated Monterey Jack cheese (about 80g) to garnish
Method:
Place a small frying pan over medium high heat and add a little oil. When hot stir in the tomatoes, onion, garlic, chilli powder and fresh chillies. Bring the sauce to a boil then reduce to a simmer and cook for about 10 minutes, or until slightly thickened.
Add a small amount of oil to a second (larger) frying pan and when hot use to lightly fry two tortilla for about 30 seconds each side. When done, transfer the tortillas to a warmed plate. Add a little more oil to a pan and fry two of the eggs until the whites are cooked through but the yolks are still runny.
Set the eggs, one on top of each tortilla. Top with 1/4 of the tomato and chilli sauce each. Now cook the two remaining tortillas and the remaining eggs. To finish the dish add some beans and top with the grated cheese. For this breakfast dish one portion equals two tortillas and two eggs.
