Ingredients:

150g freshly-grated horseradish
800g pickled baby beetroot, drained
45g sugar
60ml vinegar

Method:

Place the beetroot in a blender along with the horseradish. Chop coarsely then add the remaining ingredients and purée until smooth.

Transfer to a sterilized jars with vinegar-proof tops. Place in your refrigerator and allow to mature for 2 weeks before using.
