Ingredients:

1 tbsp vegetable oil
1 onion, diced
2 garlic cloves, minced
6 birds-eye chillies, finely chopped
500g ground turkey
500g cooked (or tinned) black beans, drained
1 400g tin chopped tomatoes
200g tin of sweetcorn
1 1/2 tbsp chilili powder
1 tbsp dried oregano
1 tbsp dried basil leaves
1 tsp ground cumin
2 tsp ground cinnamon
1 tablespoon red wine vinegar

Method:

Heat the oil in a large pan or pot over medium heat. Add the onion, garlic, chilli and spices and cook until the onions are soft and translucent. Add the turkey meat and cook, stirring continually, until the meat has browned. Now add the beans, sweetcorn tomatoes, oregano, basil and vinegar.

Reduce the heat to low, cover and simmer for at least an hour, until the flavours are well blended. This dish is best if prepared the day before, stored in the fridge over night and re-heated the following day. Either serve in a bowl topped with cheese or serve on a bed of rice.
