This is the traditional recipe for the classic Greek salad incorporating cucumber, Feta cheese and olives.
Ingredients:
4 firm, ripe, tomatoes
1 cucumber, peeled and sliced
1 medium onion sliced into rings
1 green bell pepper, de-seeded and sliced into rings
150g Feta cheese, sliced
a few ripe olives (preferably Kalamata)
a few capers
120ml olive oil
sprinkling of dried oregano, crumbled
salt, to taste
Method:
Wash the tomatoes and slice then combine with the cucumber, onion and bell pepper in a salad bowl. Toss to combine then add the olives and capers. Season with the oregano and salt then mix lightly. Arrange the sliced Feta cheese on top then dress with the olive oil.
