Home-made Kama Mixture is a traditional Estonian recipe for a classic blend of grains, yellow peas and beans that are rendered to a flour before use. The full recipe is presented here and I hope you enjoy this classic Estonian version of: Home-made Kama Mixture.

Ingredients:
2 kg rye grains
2 kg wheat grains
3 kg of oats grains
1-2 kg of yellow peas
0,5– 1 kg of barley grains
0,5-1 kg of beans
one of a handful of salt
Method:
The previous day place all the grains and pulses in individual bowls. Cover with cold water and allow to soak over night.
The following day, drain the grains, place in a saucepan, add a little salt then cover with water and cook until the grains are tender.
Drain the grains then place in an oven-proof dish. Place the soaked pulses in another dish.
Set in a hot oven to dry. To begin with, keep the oven door open, later you can close the door. Keep heating until the grains and pulses are completely dry.
Mix the grains and pulses together then place in a spice grinder and process to a fine powder.
Turn the kama mix into a lidded jar. Keep in your store cupboard.
To serve, mix 1 tbs of the kama mix with a glass of fresh, fermented our sour milk.
Season with salt to get a savoury dish or with sugar for dessert.
