Hígado Aromático (Aromatic Liver) a Classic Colombian recipe for a dish of liver marinated in lemon juice, garlic and spices that's drained and fried to cook.
Ingredients:
750g beef liver
2 tbsp fresh mint, chopped
2 tbsp fresh coriander (cilantro) leaves, chopped
6 tbsp lemon juice
1 garlic clove
salt and freshly-ground black pepper, to taste
4 tbsp oil
Method:
Wash the liver and pat dry then cut into steaks. Set these in a bowl and sprinkle with 4 tbsp lemon juice then season with salt and black pepper. Cover and set aside to marinate for 30 minutes.
In the meantime mix the herbs in a bowl with 2 tbsp oil.
Remove the liver from the marinade and dust on both sides with flour. Heat oil in a pan, add the liver and fry for between 2 and 3 minutes per side, or until done to your liking (but liver should always be pink in the centre).
Remove the liver to a serving dish and pour over the oil and herb mixture.
