Ham, Egg and Cottage Cheese Scramble: A British recipe for a breakfast dish of scrambled eggs blended with cottage cheese and ham that's been adapted to be cooked quickly in a microwave.

Ingredients:

40g butter
1 small onion, peeled and finely chopped
9 eggs, beaten
350g cooked ham, cubed
100g cottage cheese

Method:

Combine the butter and onion in a large microwave-safe bowl. Transfer to your microwave (1200W) and cook for 90 seconds.

Stir to mix the onion with the butter then add the eggs and beat well to combine. Now stir in the ham, return to the oven and cook for about 6 minutes, beating the ingredients with a fork every 40 seconds, or until the eggs are scramble to your liking.

Serve immediately, accompanied by buttered toast.
