This is a pudding of groats, shin of beef, leeks and vegetables most particularly associated with the Black Country of England that was a typical Bonfire Night delicacy of the region. Groats are hulled grains of various cereals, such as oats, wheat, barley, or buckwheat. Groaty Pudding would, typically, have been made from hulled oats.
Ingredients:
225g groats
675g shin of beef
450g leeks, sliced
2 medium onions, sliced
1 bayleaf (optional)
salt and freshly-ground black pudding
Method:
Cut the beef into bite-sized pieces then combine with the groats, leeks, onions and bayleaf in a casserole dish. Season to taste with salt and black pepper then add enough boiling water to cover all the ingredients.
Cover securely with a lid then transfer to an oven pre-heated to 180°C and bake for at least 3 hours (longer if possible). Serve hot with plenty of crusty Breads.
