Griláž (Caramel Nut Wafers) is a traditional Slovakian recipe for a classic biscuit of waffled wafers sandwiched with a nut and condensed milk filling that's set over night before slicing into fingers. Ingredients:
For the Waffled Wafers:
1 whole egg
1 egg white
1/4 teaspoon salt
55g granulated sugar
90g sifted plain (all-purpose) flour
2 tablespoons of melted butter
For the Griláž Filling
300g brown granulated sugar
225g chopped (not ground) nuts
400ml tin of condensed milk
230g margarine
Method:
Start by making the waffles. Simply combine the ingredients and blend together but do not overmix. Preheat the waffle oven and bake according to the oven instructions (it really works a treat).
Next, prepare the filling. Start by grinding the nuts. You can start using a food processor, but to get the smooth texture needed to make the creamy filling, you will need to run them through an old-fashioned meat mincer (the one that clamps to a bench and has a handle for grinding).
Melt the sugar over low heat until it turns into a caramel then add the minced nuts. Add in the condensed milk and margarine and stir until you get a creamy filling. Take off the heat and set aside to cool
Once the filling cools down, fill the wafers. Make them with 4 or 5 stacked wafers and 3 or 4 layers of filling to bind. Weigh them down by placing a plate over them and place in the refrigerator overnight to harden and set. This will make slicing easier as the wafer will soften and be less brittle.
Next day, slice the wafers using a wet knife to make the waffle biscuits.
Note that I originally bought my 10-inch ASIN Waffle Cone Maker for preparing waffled wafers for San Marino La Torta Tre Monti as a large iron is needed, but it turned out perfect for preparing these, too.
