Ingredients:
2 tbsp cooking oil
2 medium onions, quartered
500g stewing beef, cut into bite-sized pieces (oxtail or shin would be typical and chicken can also be used)
2 hot chillies, chopped
2 tomatoes, chopped
100ml tomato purée
1 tsp dried thyme, crumbled
1 tsp hot curry powder
salt and freshly-ground black pepper, to taste
Method:
Heat the oil in a large pan, add the onions and fry for a few minutes, until just translucent. Add the beef and fry gently to colour then add enough water to cover. Bring the mixture to a boil, reduce to a simmer and cook for about 60 minutes, or until the meat is almost tender.
Reduce the heat to a low simmer and add all the remaining ingredients. Stir thoroughly to combine then continue simmering for a further 30 minutes. Serve hot on a bed of rice.
