Ingredients:
2 tbsp vegetable oil
40g cabbage, finely shredded (a chiffonade)
120g celery, chopped
1 green bell pepper, chopped
1 onion, chopped
1/2 tsp salt
1/4 tsp black pepper
Method:
Heat the oil in a large non-stick frying pan then add all the ingredients and cook over medium heat for about 15 minutes, stirring frequently. During the last 5 minutes of cooking add a lid and allow the vegetables to steam gently. Make certain you stir during this time to prevent burning.
The vegetables will be crisp, but warmed through. Serve immediately.
