This is a very hearty vegetarian soup that's perfect for those cold winter nights indoors.

Ingredients:

1 tbsp margarine
1/2 head of fennel, finely chopped
3 medium carrots, diced
1 medium onion, chopped
3 garlic cloves, crushed
1 parsnip, diced
2 tsp (heaped) dried parsley
1 tbsp tomato purée
1 large potato, diced
1.2l vegetable stock
50g frozen peas

Method:

Melt the margarine in a large pan, add the fennel, carrot, onion, garlic, parsnip and seasonings. Cover with a tight-fitting lid and sweat the vegetables down over very low heat for about 12 minutes, or until tender (stir occasionally during this time).

Stir in the parsley, tomato purée, potato and stock then bring to a boil, reduce to a simmer and cook, covered, for about 25 minutes or until all the vegetables are tender.

Just before serving add the frozen peas then bring back to a boil. Ladle into warmed soup bowls and serve immediately.
