Ingredients:

1/2 tsp salt
110g butter
1 egg
4 tbsp honey
1/4 teaspoon vanilla extract
185g cooked quinoa
175g dark chocolate, chopped
90g rolled oats

Method:

Pre-heat your oven to 180°C. Line a baking tray with greaseproof paper or baking parchment.

Combine all ingredients (including 3/4 of the chocolate) in a bowl, mixing until thoroughly combined.

Using a spoon transfer the dough to the baking tray then shape into biscuits.

Decorate with the remaining chocolate then transfer to the centre of your pre-heated oven.

Bake for about 20 to 25 minutes, or until lightly golden.

Remove from the oven and set aside cool completely before serving or storing.
