This is the Galician and Basque method of preparing goose/gooseneck barnacles by cooking in salted water with bay leaves.
Ingredients:
500g goose/gooseneck barnacles
60g sea salt
1-2 bay leaves (fresh are best here)
Method:
To prepare the barnacles, gently scrub any debris or dirt off the barnacles under cold running water. Remove any visible impurities using a soft brush.
Pour enough water to cover the barnacles in a large saucepan. Add the sea salt and the bay leaves.
Once the water is boiling add the prepared barnacles. Wait until the water starts boiling again (2-3 min) then using a slotted spoon or spider transfer the barnacles to a bow.
Cover them with a kitchen cloth and serve hot. They are typically garnished with the bay leaves and may be seerved accompanied by aïoli or a dipping sauce of your choice.
