Wash the okra thoroughly then trim the ends. Slice the okra into 12mm tubes and set aside.
Beat together the eggs and hot pepper sauce in a bowl then add the okra and toss to coat.
Combine the maize meal, salt, black pepper and cayenne pepper in a shallow dish then dip the okra slices in this to coat evenly.
Add oil to a deep fat fryer or a wok and heat to 180°C. Add the okra in small batches and fry until well browned (about 5 minutes). Remove with a slotted spoon and drain on kitchen paper. Serve warm with hot sauce.
