Fricassée de Coq (Chicken Fricassee)

Ingredients:

1 oven-ready chicken (about 2kg) [or a mix of chicken portions]
3 tbsp grated garlic
60ml white wine vinegar
1 onion, peeled and chopped
4 shallots, peeled and chopped
6 sprigs of thyme, chopped
6 sprigs of flat-leaf parsley, chopped
3 prip-piri chillies, finely chopped
4 tbsp vegetable oil
500ml chicken broth
salt and freshly-ground black pepper, to taste

Method:

Cut the chicken into serving pieces. Place these in a bowl and sprinkle over the garlic and vinegar. Toss to combine then cover and set aside to marinate for 30 minutes.

After this time, heat the oil in a flame-proof casserole. Add the chicken pieces (you may have to do so in batches) and fry until golden brown all over. Add the chopped onion, shallots, thyme, parsley, chillies and any left-over marinade then pour over the chicken broth. Bring to a simmer, cover and cook gently over low heat for 60 minutes.

Adjust the seasonings to taste and serve hot on a bed or white rice.
