Fläskfilé med sås och ugnsstekta grönsaker (Pork Fillet with Sauce and Roast Vegetables) a Classic Swedish recipe for a dish of pork tenderloin pieces in a cream sauce served with mixed roasted vegetables.
Ingredients:
500g pork tenderloin
2 garlic cloves, peeled and finely copped
2 tbsp butter
1/2 tsp salt
pinch of freshly-ground black pepper
1 tsp rosemary
600ml sour cream
2 tsp mustard
1/2 beef stock cube
1 tbsp fresh parsley, finely chopped
For the Roast Vegetables:
400g potatoes
600g mixed vegetables (eg carrots, parsnips, red onions, squashes)
2 tsp butter
1/2 tsp salt
pinch of freshly-ground black pepper
Method:
Peel the vegetables, then cut into chunks or wedges. Melt the butter in a small pan, pour over the vegetables then arrange in a roasting tin. Transfer to an oven pre-heated to 225°C and bake for about 30 minutes, or until cooked through and golden on the outside.
Cut the meat into slices. Melt the butter in a frying pan, add the meat and cook until nicely browned on both sides. Season with the salt, black pepper and rosemary.
In a bowl, whisk together the cream, garlic and mustard. Pour over the meat in the pan, then crumble and stir in the beef stock cube.
Bring to a simmer and cook until the ingredients are heated through. Sprinkle over the chopped parsley and serve immediately, accompanied by the roast vegetables.
