Finadene is the classic all-purpose sauce of the Chamorro of Guam. It's pretty much ubiquitous, used as a topping, a dipping sauce and even as a sauce for plain rice. Simple to make, yet critical to the flavours of the island.

Ingredients:

125ml (1/2 cup) soy sauce
125ml (1/2 cup) vinegar
8 Thai birds' eye chillies, sliced into thin rounds (adjust to taste)
4 spring onions, white parts only, sliced into thin rounds
75g cherry tomatoes, diced

Method:

Whisk together the soy sauce and vinegar in a small serving bowl.

Add the chillies, spring onions and tomatoes. Serve as an accompaniment or as a topping for rice.
