Feijão Tropeiro (Drover's Beans) a Classic Brazilian recipe for a fry of eggs, bacon and cooked beans in a pork fat base served topped with cassava flour.
Heat the oil in a frying pan, add the eggs and fry until done to your liking. Transfer to a warmed paste and set aside. Fry the bacon in the fat remaining in the pan then remove with tongs and set aside.
Add the pork fat to the pan used to fry the eggs and bacon. Stir in the onion and salt. Add the beans and allow to heat through. Scatter over the cassava flour and stir to combine. Cook for a few minutes then return the bacon to the pan.
Arrange the eggs on top and scatter over the parsley.
Traditionally this is served with home-made sausages and braised kale.
