Fakatokelau
Faletokelau is a very traditional dessert from Tokelau. Bananas are wrapped in banana leaves, cooked in a pit oven and served topped with coconut cream. This is the modern version, where the bananas are oven baked, but it remains true to its traditional antecedent.
Halve the banana leaves then either pass over a naked flame or plunge into a pan of boiling water to soften.
Place a banana in the centre of the banana leaf then wrap the leaf around the banana creating a parcel. Secure with string.
Sit the banana parcels on a baking tray then transfer to the centre of your pre-heated oven and bake for 20 minutes.
You can either serve the bananas directly in their banana leaf parcels, pouring over the coconut cream for each serving or you can halve, place in a serving bowl and pour over the coconut milk.
