Begin with the elderflower cordial syrup. Combine the ingredients in a pan, heat gently until the sugar dissolves then take off the heat and set aside to cool.
Combine the elderflower cordial syrup and the granulated sugar and heat gently until the sugar dissolves. Immediately transfer to the bowl of your food processor then add the egg yolks and whip until the mixture doubles in volume.
Meanwhile, whip the cram until stiff then mix with the egg yolk mixture. Whip the egg whites until stiff, fold in the icing sugar then fold this mixture into the egg yolk and berry syrup mix. Place in a mould and refrigerate until set.
