Add a little olive oil to a pan and use to fry the prawns for about 3 minutes, or until pink and cooked through. Turn onto a plate and set aside to cool.
Once the prawns are cold combine all the remaining ingredients in a bowl and mix thoroughly. Ad the prawns and toss to combine then cover with clingfilm (plastic wrap) and chill for at least 3 hours before tossing and serving.
