Mayonnaise is a traditional French recipe for a classic salad dressing made from an emulsion of egg yolks and olive oil flavoured with vinegar. The full recipe is presented here and I hope you enjoy this classic French version of: Mayonnaise.

Ingredients:
1 egg yolk
1/2 tsp salt
1/4 tsp freshly-ground black pepper
1/2 tsp sugar
150ml extra-virgin olive oil
1 tbsp vinegar or lemon juice
Method:
Place the egg yolk in a bowl with the seasonings and sugar. Beat well then add the oil, drop by drop, beating all the while, until the mixture is thick and smooth.
When all the oil has been incorporated add the vinegar (or lemon juice) and gradually mix through.
