Tannia Fritters is a traditional Dominican (from the Island of Dominica) recipe for a classic vegetarian snack or accompaniment of grated tannia with vegetables, chilli, flour, egg, lime juice and milk that's fried to cook. Ingredients:
500g tannia tubers
2 Celery sticks, finely chopped or minced
1 medium Onion, minced
2 spring onions, finely chopped
1/2 hot chilli, minced (or to taste)
Oil for frying
2 tbsp Flour
1 tsp Salt
1 tsp Lime juice
1 egg
2 tbsp Milk
Method:
Wash, peel and grate tannia then combine in a bowl with the onion, celery, spring onions and hot chilli (if using).
Add the salt, lime juice, flour and mix with a fork until thoroughly combined.
Heat oil in frying pan then beat together the egg and milk. Add this to the tannia mixture, stirring to combine.
Once the oil is hot, take heaped tablespoons of the tannia mixture and drop into the oil. Fry, turning over half way through until lightly browned on both sides.
Remove the fritters from the oil and drain on kitchen paper as you fry the next batch.
Serve hot either as an accompaniment or as a snack accompanied by your choice of dip or hot sauce.
