Djibouti Lentils is a traditional Djiboutienne recipe for a classic stew of lentils and red onions with chillies, ginger and berbere sauce. The full recipe is presented here and I hope you enjoy this classic Djiboutienne version of: Djibouti Lentils.

Ingredients:
400g dried red lentils, washed
900ml water
150g green chillies, de-seeded and chopped
400g red onions, peeled and chopped
50g butter
1 tbsp freshly-grated ginger
2 garlic cloves, crushed
1 tbsp Berbere Sauce
salt and black pepper to taste
Method:
Add the lentils to lightly-salted water, bring to a boil and cook for 5 minutes. Drain, but reserve the liquid. Meanwhile, in a large pot fry the chillies and onions in the butter until the onions become translucent. Add the lentils an 800ml of their reserved boiling liquid.
Bring to a boil then add all the remaining ingredients. Reduce to a simmer, cover and cook on low heat for about 40 minutes, stirring frequently to prevent sticking.
