Berbere Sauce

Two versions of this sauce are produced, the first using red wine as a base and the other using passata (sieved tomatoes). It can be cooked as a liquid sauce or as a thicker condiment for topping burgers etc.

Ingredients:

4 tbsp Berbere spice
50g dried onions flakes
100ml groundnut oil
100m dry red wine (or passata)
1 tsp paprika

Method:

Place the onion flakes in a coffee grinder and render to a paste.

Combine with all the other ingredients in a saucepan over medium heat. Cook and stir until the sauce thickens.
