Ingredients:

2 dried hot chillies
750ml water
900g stewing beef, cut into 6mm cubes
3 tbsp oil
2 onions, chopped
2 garlic cloves, minced
2 tsp salt
1/4 tsp black pepper
1 tsp ground cumin
1 tsp hot chilli pepper
900g cooked pinto beans (tinned is fine)

Method:

Bring 250ml of water to a boil and simmer the chillies in this for about 10 minutes, or until soft. Drain and when cool dice as finely as you can.

Fry the meat in a little oil until nicely browned then add the onion and garlic and fry until tender (about 5 minutes). Add 500ml of water along with the alt, pepper, cumin, chilli powder and the chopped chillies. Bring to a boil, reduce to a simmer then cover and cook for about 2 hours, or until the beef is tender.

Heat the beans in a separate pan and when hot spoon the beans into warmed soup bowls and top with the chili mixture. Serve with cornbread.
