Ingredients:

For the Pastry:
420g flour
1 egg
240ml water
120ml vegetable oil
1/2 tsp salt

For the Cheese Filling:
450g Port Salut or Muenster cheese, finely diced
45g parsley, finely minced
salt and black pepper, to taste

oil for deep frying.

Method:

Combine the dough ingredients in a bowl. Stir well then bring together with your hands and knead until smooth and elastic. Divide the dough in half then form into two balls, cover with clingfilm (plastic wrap) and set aside for 30 minutes.

After this time, roll each dough ball into circles about 3mm thick. Then, using a bowl of about 10 to 12 cm in diameter cut the pastry into rounds. Flour these lightly and stack until you have used up all the pastry.

Now combine all the filling ingredients and toss well to mix thoroughly. Place about 1 tbsp of the filling in the centre of each pastry round then bring the edges together to form a square or triangular turnover. Press the edges with your fingers to seal then add oil to a wok or large pan and when hot use to deep fry the cheese pastries. Cook until golden brown all over, turning once (about 6 minutes). To add more flavour you can also add about 3 finely-chopped spring onions to the cheese mixture.
