Czech Liver Dumplings

Czech Liver Dumplings is a traditional Czech recipe for a classic dish of pureed liver, onion, garlic and egg thickened with bread and flour and flavoured with herbs that's dropped in boiling water to cook. Ingredients:

450g chicken livers
5 slices white bread, torn
1 medium onion, chopped
freshly-chopped parsley, to taste
1 egg
6 tbsp plain flour
1 1/2 tsp salt
1/4 tsp freshly-ground black pepper
3/4 tsp dried marjoram, crumbled
2 garlic cloves, chopped
chicken stock

Method:

Combine the liver, onion, parsley, garlic and egg in a food processor. Pulse until smooth then add the salt, black pepper, marjoram, flour and bread. Process until combined then scrape into a bowl and transfer to a refrigerator. Chill for at least 2 hours to ensure the mixture is firm before cooking.

To cook, bring a pan of chicken stock to a boil then drop the liver mixture into this from a large tablespoon. When you have added the last of the liver mixture return the pan to a boil, reduce to a simmer then cover and cook for 10 minutes.

Traditionally this dish was served for holiday meals.
