Cypriot Souvlaki is a traditional Cypriot (from Cyprus) recipe for a classic classic dish of oil-brushed meat threaded onto skewers and cooked in a barbecue that's served in a pita bread pocket with tomatoes, cucumber and yoghurt or tzatziki. Ingredients:
400g beef, lamb or pork cut into bite-sized portions
salt and freshly-ground black pepper, to taste
olive oil for brushing pita bread
diced tomatoes, to serve
diced cucumber, to serve
plain yoghurt or tzadziki to garnish
lemon wedges
Method:
Thread the meat onto skewers that have been soaked in a bowl of water for 20 minutes beforehand. Brush with olive oil and season to taste.
Place the skewers on a hot barbecue (or under a hot grill) and cook, turning frequently and brushing with olive oil as you do so, until the meat is cooked to your liking.
In the meantime, prepare pita bread. When the meat is cooked, open the pita breads to form a pocket. Add tomato, cucumber and parsley to the pita pocket then add the cooked meat.
Garnish with yoghurt or tzatziki (if desired) and serve with a lemon wedge.
