Tzadziki

Tzadziki is a traditional Cypriot (from Cyprus) recipe for a classic sauce or dip made from a blend of yoghurt, garlic, cucumber and olive oil. The full recipe is presented here and I hope you enjoy this classic Cypriot version of: Tzadziki.

This is the Cypriot version of Greek yoghurt and cucumber dip, tzatziki made from a blend of yoghurt, garlic, cucumber and olive oil served in a white bowl with a sprig of dill.

Ingredients:

500g Greek yoghurt
3 garlic cloves, minced in a garlic press
120ml extra-virgin olive oil
1/2 cucumber

Method:

Turn the yoghurt into a bowl then press the garlic on top of it. Mix to combine.

Peel the cucumber and slice as thinly as you can. Add to the yoghurt mix and stir to combine. Now work the oil into the yoghurt with a fork and stir until completely absorbed.

Garnish with a few olives and serve with a spoon.
