Karni Mulá ku Zuurkool (Minced Beef with Sauerkraut)
Karni Mulá ku Zuurkool (Minced Beef with Sauerkraut) is a traditional Curaçaoan recipe for a classic pie of a minced meat base topped with sauerkraut and then pineapple that's finished with a mashed potato top before being oven baked. In essence, this is an island twist on cottage pie, a baked dish of a minced beef base covered with sauerkraut and pineapple that's topped with mashed potatoes and oven baked to finish.
Ingredients:
500g minced (ground) beef
1 medium onion
1 green bell pepper
1 tsp of garlic powder
200ml of tomato sauce
2 tbsp capers, coarsely chopped
675g of potatoes
600g of tinned sliced pineapple
600g jar of sauerkraut (or use this recipe for home-made sauerkraut)
2 tbsp of butter, divided
50g raisins
freshly-grated nutmeg and salt to taste
675ml of milk
Method:
Pre-heat your oven to 180°C.
Peel the potatoes, quarter them then set in a pan of salted water and bring to a boil. Cook for about 25 minutes, or until tender then drain and transfer to a bowl. Add in 1 tbsp butter and a splash of milk then mash until smooth and set aside.
In the meantime, take a saucepan or deep frying pan and place over medium heat. Add in the remaining tablespoon of butter and use to fry the minced beef, chopped onion, chopped bell pepper, garlic powder, nutmeg and salt. Fry, stirring frequently, and breaking up the pieces of beef until the onion is soft and the meat is no longer pink (about 8 minutes).
Stir in the tomato sauce and continue cooking for about 5 minutes, or until the beef is done through. At this point stir in the capers then take the pan off the heat.
Turn the minced meat mixture into the base of a baking dish, spreading it evenly over the base. Drain the sauerkraut, mix with the raisins and add this as a layer on top of the beef. Drain the pineapple and arrange over the sauerkraut then top with the mashed potatoes, ensuring the other ingredients are completely covered.
Transfer the dish to the centre of your pre-heated oven and bake for about 30 minutes, or until the potato topping is golden brown and the filling is piping hot.
Remove from the oven, allow to cool slightly then serve.
As a variant, you can spread a little grated cheese over the mashed potatoes before baking.
