Cumin Potatoes with Peas: An Irish recipe for an accompaniment of potatoes roasted with onion and cumin seeds in oil and lemon juice that are finished with peas and mint.
Ingredients:
1kg small new potatoes, scrubbed clean
1 large onion, chopped
2 tbsp cumin seeds
2 tbsp oil or melted ghee (clarified butter)
juice of 1 lemon
salt and freshly-ground black pepper, to taste
250g frozen peas
2 tbsp mint, chopped
Method:
Take a clay baking dish and soak in clean, cold, water for at least 15 minutes.
Drain the dish then arrange the scrubbed potatoes inside before adding the onion, cumin seeds, oil or ghee and lemon juice. Sprinkle the seasonings over generously.
Cover the dish then transfer to a cold oven. Set the oven temperature to 240°C and cook for 40 minutes. At this point add the peas to the dish, mixing them in with the potatoes. Re-cover, return to the oven and cook for 15 minutes more, or until the potatoes are tender and the peas are lightly cooked but heated through.
Remove from the oven and allow the dish to stand, covered, for 10 minutes. At this point take off the lid, mix in the mint and serve.
