Ingredients:
1 chicken (about 1.5kg) cut into serving portions
2l water
1 onion, chopped
350g cooked ham, cubed
3 potatoes, diced
1kg tinned tomatoes, chopped
300g cooked lima beans
300g frozen sweetcorn
2 tsp salt
1 tsp sugar
1/4 tsp black pepper
1/2 tsp salt
Method:
Combine the chicken, onion, ham and potatoes with the water in a crockpot. Cover and cook on low for about 4 1/2 hours, or until the chicken is done. Remove the chicken from the broth, allow to cool a little then strip the meat from the bones.
Return the meat to the pot then add the tomatoes, beans, sweetcorn, salt, sugar and black pepper.
