Ingredients:
900g broccoli florets, choped
400ml
cream of celery soup (or use tinned)
240ml
mayonnaise
3 tbsp onion, grated
2 eggs, beaten
200g Cheddar cheese, grated
1 packet Ritz crackers
125g melted butter
Method:
Steam the broccoli gently for about 8 minutes, or until just tender then drain and set aside to cool.
Combine the soup, mayonnaise, onion, egg, cheese and cooled broccoli then place in a lightly-greased 3.5l slow cooker (crockpot).
Crush the Ritz crackers and mix with the butter. Use this to top the broccoli mixture then cook on high for about 2 1/2 hours. Serve hot.
