Crispy Pork Roast with Basil Sauce is a traditional German recipe for a classic dish of roast pork baked with vegetables that's served with a gravy made from the meat juices that's flavoured with basil. Liberally season the meat with salt and black pepper and rub in thoroughly. Transfer the meat to a roasting tin and add the onions, greens and garlic. Cover and place in an oven pre-heated to 200°C to roast for 30 minutes.
Meanwhile combine the basil, parsley, lemon zest and oil in a cub and whisk to combine. Add a little oil to a pan and use to gently fry the peas until thawed and just softening. Transfer to a bowl and use the remaining oil to fry the tomato slices for about 1 minute per side then add the peas back to the pan. Add a little of the vegetable stock and allow to simmer gently.
Remove the meat from the pan then cover with foil and set aside to rest. Meanwhile, add the balsamic vinegar and vegetable stock to the meat juices and vegetables in the base of a pan. Bring to a boil, stirring vigourously then reduce to a simmer and cook for 5 minutes. Pass through a sieve into a pan then stir-in the cornflour, paprika, soy sauce and the basil mixture (reserve the greens). Simmer until thickened then slice the meat and serve with the peas, greens, rice and the gravy.
