This is a classic modern French vegetarian dish or accompaniment of cucumbers cooked with almonds and raisins in a lightly-curried sauce.

Ingredients:

700g cucumbers, washed, peeled halved lengthways then cut into chunks
120g yellow onion, peeled and diced
100g Greek yoghurt
60ml (1/4 cup) crème fraîche
30g raisins
2 tbsp flaked almonds
1 tbsp oil (groundnut or rapeseed) rapeseed
1 tbsp mild curry powder
1/2 tbsp coriander, finely chopped
1/2 tsp powdered ginger
1/4 tsp ground turmeric
freshly-ground black pepper, to taste

Method:

Place a frying pan over medium heat. Once hot, add the oil and useto fry the onion for 1-2 minutes, until just softened.

Add the cucumber pieces, scatter over the curry powder, turmeric and giner then mix to combine.

Add in the yoghurt, crème fraîche and raisins then mix well. Cover the pan and continue cooking over medium heat for 10-15 minutes (this depends on whether you want the cucumber pieces crunchy or soft [I prefer a little bite]).

Take off the heat and turn into a serving dish. Scatter over the almonds and chopped coriande then bring to the table.
