The traditional Spanish tortilla consists of just three ingredients: eggs, potatoes and onions; yet you end up with a supremely satisfying and tasty dish.

Ingredients:

1 large onion
4 tbsp olive oil
4 potatoes (about 500g), thinly sliced
5 large eggs, well beaten
salt and freshly-ground black pepper, to taste

Method:

Peel the onion, cut in half lengthways then slice thinly lengthways and separate into slivers.

Heat 3 tbsp of the olive oil in a 20cm diameter heavy-based frying pan. Add the potatoes to the pan in layers, alternating these with the onions. Cook for about 10 to 15 minutes over medium-low heat, turning them occasionally until just tender.

Remove the onions and potatoes with a slotted spoon and set aside to drain in a colander (reserve the oil).

Place the eggs in a bow, beat together and season with salt and black pepper. Add the fried vegetables to the eggs and mix gently.

Heat the reserved oil in the pan, adding the remaining 1 tbsp oil. Add the potato and egg mixture, spreading it evenly over the pan. Cook over medium-low heat until the bottom is golden brown and the top is almost set.

At this point, put a plate on top of the frying pan and invert the pan so that the tortilla falls out onto the plate. Slice the tortilla back into the pan, with the browned side uppermost and cook for about 3 minutes more, or until lightly browned underneath.

Serve hot, sliced into wedges.
